Mar de Envero: New ways of understanding the wine

In August it takes place the verasion, key moment when the grape turns mild and changes its color, returning in the alone day yellowish white and dark the ink, providing this way to the cluster the characteristic tone of the ripeness. Inspired by this process of change, two enterpreneurs Galician young persons: Manyo Moreira in charge of the production and Breixo Reymóndez, manager of the winery, decide to join their experience to found Mar de Envero, a wine cellar convinced in the need of new ideas to manage to take advantage at the maximum level of the enormous wine potential of Galicia.

Elaborate a quality wine from noting, without the structures behind that many desires of working, illusion and formation, it is the challenge that has to just made real Manyo Moreira, 32-year-old from Santiago de Compostela enologist who embarked in the project with two partners in order to elaborate the albariño Mar de Envero, the wine of the Rías Baixas designation that was chosen by the restaurant Enxebre to ucombine with blue fish from some gastronomic days.
